The IICRC (Institute of Inspection Cleaning and Restoration Certification) has set out specific guidelines for the management of a drying job.  Before hiring a restoration contractor, even one referred by your insurance company, ask them if they are an IICRC Certified Firm and if their technicians are water certified.  In addition to the industry certification any restoration vendor you hire should be a licensed contractor able to write you an estimate before beginning work.
